Baked Walleye & Asparagus

So yummy and healthier than beer battered, deep fried walleye [even though I love it that way too].

Walleye ingredients:
Walleye fillets
1 medium tomato chopped
2 tbls chopped green pepper
2 tbls chopped onion
1 tbls lemon juice
1/4 tsp of Thyme

Directions:
Arrange fish in single layer greased 9x9 baking pan. Combine other ingredients and then pour over fish. Bake at 400 degrees for 20 minutes.

Asparagus ingredients:
Raw asaragus
Extra virgin olive oil
Parmesean cheese
Salt & Pepper

Directions:
Season asparagus with olive oil, parmesean cheese, salt and pepper, Bake at 350 degrees for 10-15 minutes.

The walleye receipe is from my mom. The asparagus receipe was a pinterest find...so here is the LINK to that.

We put tinfoil in the pan so it makes for easier cleaning

We also made boxed wild rice...love it!

So healthy and good!!!!

Sliding into Home...Really Fast!!!

A few weeks ago, I blogged about books I wanted to read in the near future. That post you can find HERE. I already finished one book on my list and plan to start a 2nd one very soon.

In that post, I said I was going to read Ellen's book next, but that wasn't immediately available @ the library so I had to start with Kendra Wilkinson's book, Sliding into Home.

I just finished reading this book on Saturday before bed. I checked it out on that Monday and finished it in less than a week. It was that good...I couldn't put it down. I would read before bed and bring it to the gym and read while doing cardio. [Reading makes my 30 min cardio session go by sooo fast...definitely going to be doing that more often].

This book is so interesting...to say the least. You learn so much about Kendra growing up, her connection with Hef and what went on behind the scenes of the hit reality show, 'The Girls Next Door'. I always watched the show so it was really nice to read about things that went on that we didn't know about. It was also interesting to read what it meant to be Hef's girlfriend and what went on behind closed doors.

What I found most interesting about this book was how she met Hank, her husband, and their secret relationship while still being one of Hef's girlfriends. I currently watch her show 'Kendra', so it's really interesting to read where it all started.

I would definitely recommend this book to anyone that watched any of her reality shows or wants to know more about her. It's not the best written book, but definitely very entertaining and keeps you wanting more.

What other books should I add to my list?

Grandma Bossmann

The Tuesday before my wedding, my Grandma passed away and made her way to Heaven. She had been doing OK health wise, but took a turn for the worse about 2 weeks before the wedding. I was under the impression that she would make it until after the wedding (even though I knew that her and my Grandpa couldn't make it due to health reasons).

Christmas 2010

When I found out she had passed, I was devastated. She was my first grandparent to pass. People kept telling me that she was now going to be able to make it to our wedding and she will have the best seat in the house. I felt comfort knowing I had another angel watching over me and that she was in a better place and not in pain.

My Grandma and Grandpa had a total of 10 kids, with my mom being the second oldest. They owned a farm outside of Faribault and we would frequent there often growing up. They had a trampoline for us to play on, we would feed cattle and play with the kittens.

My Grandma's funeral was the Monday after our wedding and we missed it since we were on our honeymoon. I thought of her everyday while on our honeymoon and prayed for her. I was very sad to miss it, but my Grandma would not allow me to feel bad, be unhappy or miss out an once in a lifetime trip.

My Grandma was a very loving person who always made you feel like number 1. She was witty and kind. She definitely knew how to run a household and keep everyone in line. I will miss her greatly and find comfort that I will see you again someday in Gods kingdom.

I love you Grandma and miss you. I hope you are having a splendid time up in the clouds. Please know that I think of you often and pray for you everyday.

XOXO

30 Day Blog Challenge - Day 29

* In this past month, what have you learned

- I have learned that the 30 day blog challenge is not that hard because it gives you a topic to blog about everyday for those 30 days, but thinking of other topics to blog about is difficult for me. I am an accountant without a 'creative' mind.

- I have learned that I loved planning our wedding, but love the fact that I don't have to run 50 earrands after work and feel stressed.

- I have learned that there is not enough time in a day to get done everything I have in mind to get done.

- I have learned that we should have bought a snowplower 2 years ago when we bought the house!

- I have learned that I am an addict of pinterest.

- I have learned that even though my husband works many hours and really loves his job, I am grateful that he is such a hard worker and doesn't do anything 1/2 a.s.s.

- I have learned that my dog has horrible breathe and we need to brush her teeth...which she hates and runs away!!!
